Abstract

Interest in food justice initiatives has recently gained traction among higher education institutions. Understanding the role higher education can play in the food justice movement may help in educating the next generation of professionals in the field of food systems. Single courses, minors, and degree programs along with research and program initiatives are all contributing to the field of food justice. Furthermore, colleges and universities are now implementing policies and practices consistent with food justice movement, with many of these initiatives being student-led. This work has the opportunity to shape how policymakers explore and respond to issues of food systems, quality, and equity throughout the nation.
