3D Food Printing as a Means of Gastronomic Heritage Preservation: Potential Use and Practical Application

Abstract

Portuguese gastronomy is a well-known touristic attraction and plays a significant part in national identity. Despite its recent recognition on a global level, it continues to suffer from the loss of cultural heritage throughout time. This is primarily due to the seclusion that different communities have experienced in the hinterlands of the country and the exodus of younger generations from these places, which has left the older population behind and, as a result, the loss of generational exchange of artistic and culinary expertise. The emergence of 3D food printing has raised the prospect of preserving these historical customs, as evidenced by previous research using traditional additive manufacturing techniques for manufacturing of souvenirs, such as pottery and sculptures. This research employs two distinct methods: first, a bibliographic analysis to assess the existing literature and identify possible applications of food additive manufacturing technology on Portuguese cuisine; second, the development and adaptation of a traditional Portuguese dessert using an extrusion-based 3D food printer. Implications: While several studies have suggested using 3D printing technology to preserve cultural heritage, the application of this technology has never been thoroughly explored with that purpose. This study promotes a more comprehensive understanding of the applications of this state-of-the-art technology. It also contributes to the potential of digitalization of cultural heritage by developing a recipe catalog and the heritagization of rural communities by introducing innovative small-scale manufacturing procedures and encourage tourism in those areas by developing value-added tourism products.
