Abstract
Structured lipids (LE) MLM are enzymatically modified lipids using 1,3 regioselective lipases with the aim of modifying fatty acids in triglyceride positions, these are a healthy oil alternative as they have functional properties, metabolic and physiological effects used in the prevention and treatment of several chronic non-communicable diseases such as obesity, diabetes (NCD) and cardiovascular diseases and hepatic steatosis. LS MLM are an alternative for those who wish to consume healthy foods, and ideal for people with metabolic or fat absorption problems. We seek to determine the effects of LE MLM against metabolic alterations related to obesity induced by a high-fat diet in mice. The production of LE MLM, capric acid was incorporated into grape oil (UA) to obtain LE MLM. Experimental, randomized, controlled, prospective, animal model study, assigned to 8 experimental groups, mice were fed control diet (CD) or high fat diet (HFD) and supplemented with grape seed oil (HFDAU) and LE MLM (HFDLS) for 12 weeks. Results indicate HFD feeding for 12 weeks induced obesity, a proinflammatory state, and insulin resistance in contrast, HFDAU and HFDLS feeding achieved a protective effect through attenuation of hepatic obesity, decreased inflammatory state, and insulin resistance, being more representative in the diets supplemented with LE MLM. We conclude AU supplementation and LE MLM evidenced protection against the damage caused by the HFD diet being more evident with LE MLM, so it could be considered as a potential therapeutic line for the management of obesity and diabetics.
