The Formation of Immigrant Cuisine: New Voices in Gastronomic Culture

Abstract

This article aims to debate, from a historical-cultural perspective and using an approach within the food / gastronomic culture, an immigrant food culture, or the food culture dialogue established and interpreted in the cities, using as a central theme a discussion about culture brings for them and the circumstantial time frame of their entry into the country. As facilities and difficulties encountered, a way of spreading their culinary habits and accepting new habits in current culture - 21st century - already fragmented by several other contexts. It deals with a hypothesis that the food culture of cities and the immigrant must be included within a temporal and circumstantial framework and not with a single definition of “culture”, as it is interpreted by a large part of the population, using samples of large metropolises building, from there the interpretation of the cultural formation of the immigrant’s cuisine. It is research inserted in a doctoral in progress, qualitative, with the support of the documental and bibliographic methodology. From the discussion, conclude that this article indicates data for a new interpretation of the construction of the food culture of immigrants in large cities.
