Factors and Impact of Food Security Practices in the Hospitality Industry

Abstract

The purpose of this study is to present a cohesive conceptual framework which assesses the food safety management system given the food security crisis in the South Asian economy. Further, no studies have been made over the impact that the implementation of this standard has had on supply chain management. Therefore, the study analyses the benefits, constraints, costs incurred, and post-implementation performance indicators. The research methodology is a combination of Delphi technique and literature analysis. By understanding the literature concerning the food security issues, benefits, challenges, costs and post-performance metrics suitable to be used in the hospitality industry were identified. The attributes were submitted to a multidisciplinary panel of experts, who used this technique to generate opinions. Results show that the benefits, constraints, and costs of implementing ISO 22000 within the hospitality industry have a significant impact on this industry. According to the findings, the critical factors and post-implementation metrics also have a significant impact on the achievement of the firms aim to control of food contamination, wastage and improve quality of food. The study being hospitality industry-specific could be seen as a limitation of the research. Therefore, the results of this study cannot be generalized to other industries. This paper is one of the few studies that analyses the implementation of Food safety management system over the food supply chain.
