Eat Local: The Locavore and Sustainable Food Revolution in the US

Abstract

Over the course of this presentation, we closely examine the food systems used across and within the US, predominately the importance of local and sustainable food. This session explores how attendees can participate in the locavore movement and the benefits of doing so. We review the “cost” of each food system in terms of economic, social, and environmental impacts on an international national, regional, and local level. To give perspective on “how we got here” we consider the timeline of how food systems have developed and evolved in the US. We discuss how the choices we make today in terms of the food we produce and consume will shape food systems of the future. This session calls on our communities of individuals, business, and academics to make local sustainable foods accessible to all.
