A Narration of Authenticity

Food is more than a mere commodity; it is a rich, powerful symbol deeply rooted in cultures worldwide. Globally the demand for “authentic” food has increased. While scholars agree that defining authenticity is challenging because of the influences of globalization, the appetite for “authentic” food continues. This study explores the meaning of “authenticity” from an owners’ perspective in a type of restaurant in Turkey which dates to the Byzantine Empire: meyhane. This research examines the intersection of culture within the narratives of “authentic” meyhane restaurants at a geographical mecca that embraces two continents, Istanbul. The objective of the research is to examine the meaning of authenticity from the perspective of ten meyhane owners in Istanbul, Turkey. The methodological framework is based on an analysis of open-ended interviews with ten meyhane owners over a four-month period and my informal observations conducted in their restaurants. As all “authentic” identities are constructed and culturally fragmented by society, initially, so was the data that was collected from the restaurant owners. However, patterns started to emerge through narrative analysis. Using an inductive approach, recurring themes about the roles of the social and physical environment, traditions surrounding food and drink, and food and culture resonated. Meyhane, an “authentic” experience that has withstood historical and societal 9 changes, has kept its core identity intact for centuries, however, at the same time, is not resistant to change. Thus, the meyhane creates the “third place” where everyone is welcome, people are accepted, and everyone is allowed to be “authentic.”

The incidence of overweight and obesity in the Mexican population has increased above 70%, mainly driven by a HFHC diet. The objective of the present study was to investigate the biochemical, cognitive and histological effects of the hypercaloric diet. 12 mice of the BALB/c strain were divided into 2 groups: the control group and the treatment group. For 7 months the control group was administered a standard diet with pellets and the experimental group a HFHC diet. Bromatological tests were performed on the diet twice, as well as biochemical and cognitive tests on the mice. On the 7th month they were sacrificed and a histological analysis of the liver, kidney, heart, lung, adipose tissue and brain was performed. Lipid droplets were found in the liver, compact glomeruli and thickened renal tubes were found in the kidneys, wall thickening and decreased vascular lumen were found in the heart. In the brain, marked cellular damage possibly consistent with apoptosis due to intraneuronal amyloid formation was found in treated mice compared to controls, which may be related to the results of cognitive tests towards memory loss. These findings suggest that the HFHC diet negatively affects the morphology of the digestive, metabolic and central nervous system organs, before biochemical and motor alterations appear.

Food Systems’ Sustainability through the Climate-Biodiversity-Health Framework

Food systems are complex and multifaceted, comprising a diverse range of actors, processes, and interactions. The complexity of food systems necessitates the utilization of participatory system thinking as an effective approach to comprehending and developing sustainable and resilient food systems. However, the way the system maps can be visualized in participatory system thinking approaches is controversial. This practical research is a part of the Integrated Food Systems Planning Through Climate-Biodiversity-Health (CBH) Nexus project in the Comox Valley case. It pursues two main aims: to finalize the CBH system map of Comox Valley’s food systems, developed with a participatory approach, with the participation of stakeholders; and explain how participatory system thinking can be employed to clarify the complexity of food systems in a clear and concise manner for all stakeholders. The research is conducted by holding a series of workshops and using qualitative content analysis. The results of this study are used to finalize links and nodes of the system map and also propose developing a multi-dimension and multi-level app to show complex systems to share a clear, understandable, and reliable complex system map for all stakeholders. The findings demonstrate how different strategies align or conflict with various CBH imperatives, which can be utilized to support integrated community sustainability planning efforts, and additionally, the systems maps can be used as an analytical framework for further studies on how to address food systems (and broader sustainability) issues in a holistic way.

Nutrient-sensitive Approach for Sustainability Assessment of Australian Macronutrient Dietary Recommendations

This study examines and demonstrates the potential of integrating input-output analysis with nutritional geometry to assess the sustainability of Australian macronutrient dietary guidelines (AMDR) relating to macronutrients. We used daily dietary intake data of 5345 Australian adults from the most recent Australian Nutrient and Physical Activity Survey 2011-2012 and an input-output database for the Australian economy to quantify the environmental and economic impacts associated with dietary intake. Then, we examined the associations between environmental and economic impacts and dietary macronutrient composition using a multi-dimensional nutritional geometry representation. Thereafter, we assessed the sustainability of AMDR in terms of its alignment with key environmental and economic outcomes. We found that diets adhering to AMDR were associated with moderately high greenhouse gas emissions, water use, cost of dietary energy, and contribution to wages and salaries of Australians. But, only about 20.42% of respondents adhered to AMDR. Furthermore, high-plant protein diets adhering to the lower limit of recommended protein intake in AMDR were associated with low environmental impacts and high incomes. We conclude that encouraging consumers to adhere to the lower limit of the recommended intake of proteins and meeting the protein requirement through protein-dense plant sources could improve dietary environmental and economic sustainability in Australia. Our findings provide means of understanding the sustainability of dietary recommendations concerning macronutrients for any country in which input-output databases are available.

Exploring Opportunities for Sustainable Healthy Foods through the Upcycled Food Certification

Upcycling food is a technical solution for reducing food loss and food waste within the food system that can address a multiplicity of climate-related challenges. While the practice of upcycling food has existed for millennia and across cultures since the industrialization of the modern food system there have been new opportunities to integrate these practices at a larger scale. In response to this opportunity, social entrepreneurs and innovators have begun to create new food products using upcycled approaches inspired by the model of the circular economy. At the organizational level, a new certification program recognizes these efforts. However, there has been a gap in research and analysis to understand where these food products fit into a healthy diet pattern. Given the importance of ensuring a sustainable healthy diet, this research categorizes certified upcycled foods based on the NOVA classification system and offers recommendations for upcycled food manufacturers for communicating the nutritional value of their products.

The design and development of a funcional food type snack, made with pigmented maize, carrot bagasse and ellagic acid is evaluated with elder people to be able to detect biochemical and anthropometric parameter changes related to metabolic syndrmoe and obesity - as well as the evaluation of sensorial analysis. This study contributes to the enhancement of the food industry related to positive effects on human health.

Members of the electorate often rely on political heuristics when deciding for whom to vote, and a candidate’s personality can contribute to their popularity during the campaign cycle. Indeed, studies have shown that the candidate individuals would rather “have a beer with” tends to fair better come Election Day. This metric appears to have harmed Hillary Clinton in 2016, as she merely functioned as the candidate people would rather invite over for dinner, while Trump emerged as the preferred beer buddy, especially among men. Having a drink with a candidate is a fundamentally different activity than inviting them over for dinner. It deserves further investigation, as it speaks to a candidate’s likability. In this paper, I unpack the gendered nature of beer and investigate whether or not this metric generally hurts female candidates’ chances of appearing personable by evaluating the results from an original survey experiment. I compare two fictional candidates from the same party, one male candidate and one female, and construct three conditions to compare how the gender stereotypes evoked by an alcoholic beverage shape their appeal. The conditions ask respondents the candidate with whom they’d rather have a beer, have a glass of wine, and have a drink, respectively. The findings reveal if the gender stereotypes evoked by the “beer metric” question subtly harm women running for office. If the two candidates are more appealing in different contexts, then campaign strategists for female candidates may wish to find an alternative metric of likability.
Exploring the Bidirectional Relationship between Household Food Insecurity and Parents’ Mental Health

Food insecurity (FI) and poor mental health (MH) are pressing public health concerns that share a critical connection with dietary behaviors and nutrition outcomes. There is evidence that FI and poor MH are causally linked but different studies have found mixed results. Our study examines the bidirectional relationship between the two to determine whether household FI predicts parent’s poor MH, and vice versa, while estimating the underlying pathways. Longitudinal data from the Family Matters study of 1,307 families from six racial/ethnic groups in Minneapolis/St. Paul, USA was collected in 2017-2018 (baseline) and 2019-2020 (follow-up). FI was determined by the USDA 6-item questionnaire and MH was assessed using the Kessler-6 psychological distress scale. Demographic and socio-economic variables, in addition to potential mediator variables, were controlled for in the analyses. Multivariate linear and logistic regression models were used. Results: At baseline, 28.4% of households in our sample were FI and 8.4% of the parents were psychologically distressed. FI at baseline was significantly associated with poor mental health at follow-up (p< 0.01), while the reverse (poor MH at baseline and FI at follow-up) was not statistically significant. While household FI and parent’s poor MH tend to be associated with one another, this study suggests that the likely direction of causation is from FI to poor MH. It, therefore, calls for policies and interventions that address FI since benefits may spill over into improved mental health outcomes: programs providing food assistance may also introduce participants to mental health resources.
